Seems my prayers may be answered in 2018.
I saw a video the other day and someone had fitted a 9100 Dura Ace and managed to use it on a 50 front with a 40 big at the back. I presume the Ultegra 8000 does the same.
40 at the front with a 40 in the back still gives you a 27" bottom gear and at 100rpm 40x11 gives you about 29mph so depends on what terrain and type of riding plus your fitness as to suitability but for many you certainly don't need to go with an MTB derailleur like the XT to achieve a very usable 1x system.

Gotcha, thanks people. I’m assuming there’s no way of getting round the fact that there’ll be an inactive di2 button on the “usual” front mech shifter?

You need to get a XTR or XT Di2 rear derailleur, it will take upto 42t cassette. I've got the XT Di2 with a front derailleur aswell. I run a 11-40 for alpine mountain climbing
