I've only bought an Endurace frameset (medium) from Canyon but I imagine they don't do anything different for a full build.
Frameset came with the stem pointed down, so you'd be able to flip it to raise your bars. Mine came with...hang on, let me go check...27.5mm of spacers, with 2 x 10 mm, 1 x 5 mm, and 1 x 2.5 mm, with the steerer tube cut such that you would not be able to add any more spacers. I don't know whether they would add any more spacers for a larger frame.
